Our Olive Oil

Besides managing the B&B, Ginevra also runs the family farm Saletta, an ancient plot of land located on the south-east hills of Florence, near Impruneta, a village renowned for centuries for the refined terracotta and the finest olive oil.
In 2000 Ginevra converted what always has been her biggest passion into a small business devoted to high quality extra virgin olive oil production.
At Saletta the cultivation is carried out with organic methods, from fertilization to pest control. The olive cultivars are the ones of the Tuscan tradition -Frantoio, Morellino, Leccino, Pendolino- together with some ancient and local ones like Madonna dell’Impruneta and Rossellino.
The olives picking is done by hand, the pressing within six hours and the oil extraction under controlled temperature. All these procedures contribute to obtain a really special extra virgin olive oil: very low in acidicty, with a golden colour and green hews, intensely fruity, fresh to the taste with pleasant shades of bitterness and spicyness.
Ginevra wants everyone to be 100% sure of the quality of her oil. For this reason the oil has the Toscano IGP certification (Protected Geographical Indications) – Colline di Firenze, which certifies that the entire production process is done in the specific area of the Florentine hills.
